As Sherry is having a bit of a moment - long may it last - that's been more obvious this year. Sherry is only really Sherry if it comes from the right part of Spain, but there's a whole lot of things that will give you roughly the right flavour profile for cooking and only having one bottle open at a time is much better. Your mince sounds delicious and if anyone else in my family ate it I would definitely try your recipe! <br /><br />And I am sorry about your cranky customer, but now I'm very intrigued by your sherry. I do like sherry and fortified wines, for both cooking and drinking. Recently I was making chicken Marsala and came up short. In desperation I pulled out a bottle of Harley's Bristol Cream to make up the difference, and in quick side by side tastings were nearly identical! To be fair there's always a hiccup with Sherry supply around now, and every year we all go nuts about it. On the up side I had a lovely conversation with a customer about how much we both disliked this time of year, which I think improved both our days!
